Meat Intake, Heterocyclic Amines, and Risk of Breast Cancer: A Case-Control Study in Uruguay1

چکیده
To study the effects of meat intake, including heterocydic amine exposure, on the risk of breast cancer, we conducted a hospital-based case-control study involving 352 patients with breast cancer and 382 controls. A strong effect of red meat, total meat, beef, fried meat, and heterocydic amine exposure was found, after controffing for potential confounders. The odds ratio for the highest quartile of 2-amino-3-methylimidazo [4,5-fiquinoline exposure was 3.34 (95% confidence interval 1.85-6.02). According to these results, meat intake and chemicals formed during the cooking process appear to be strong risk factors in human breast carcinogenesis.

متن کاملHeterocyclic amine content of cooked meat and risk of prostate cancer.
BACKGROUND Some epidemiologic studies have described positive associations between prostate cancer risk and meat consumption, but underlying mechanisms have not been identified. Heterocyclic amines are mutagens formed during the cooking of meat. Well-done meat has been associated with increased risks of colorectal and breast cancers in humans. This study examined associations between prostate c...

BACKGROUND Heterocyclic amines, mutagens formed in meats cooked at high temperatures, have been demonstrated as mammary carcinogens in animals. We conducted a nested, case-control study among 41836 cohort members of the Iowa Women's Health Study to evaluate the potential role of heterocyclic amines and intake of well-done meat in the risk for human breast cancer. METHODS A questionnaire was m...
متن کاملN-Acetyltransferase-2 genetic polymorphism, well-done meat intake, and breast cancer risk among postmenopausal women.
Heterocyclic amines found in well-done meat require host-mediated metabolic activation before initiating DNA mutations and tumors in target organs. Polymorphic N-acetyltransferase-2 (NAT2) catalyzes the activation of heterocyclic amines via O-acetylation, suggesting that NAT2 genotypes with high O-acetyltransferase activity (rapid/intermediate acetylator phenotype) increase the risk of breast c...

High intake of meat, particularly red and processed meat, has been associated with an increased risk of a number of common cancers such as breast, colorectum, and prostate in many epidemiological studies. Heterocyclic amines (HCAs) are a group of mutagenic compounds found in cooked meats, particularly well-done meats. HCAs are some of most potent mutagens detected using the Ames/salmonella test...
